Is there anyone who hasn’t made a banana bread during the lockdown? Well, I have Healthy Gluten-Free Banana Bread recipe already on my blog but this one I think is definitely needed right now. So if you fancy a night chocolatey moist banana bread that is also vegan, then here you go.
Ingredients;
- Loaf Tin
- 3 Ripe Bananas
- 70 grams of oil or butter
- 220 grams of Self Raising Flour
- 2 tsp of baking powder
- 4 tsp of cinnamon (I love Cinnamon)
- 60 ml of milk (I used Oatly)
- 50 grams of chopped up chocolate or chips
- Demerara sugar for topping
- 1 banana for topping
Method;
- Preheat the oven to 180 Degrees Celsius
- Mash up bananas and the add oil or melted butter
- In another bowl add the flour, baking powder and cinnamon
- Combine the wet and dry ingredients
- Add 60 ml of milk of your choice, a little at a time until you get the consistency you want
- Add chocolate chips and combine
- Add to a greased or lined loaf tin
- Cut one banana in half and place on the top
- Finish by sprinkling of demerara sugar
- Place in the oven for 45 mins, check after 20 mins and cover with foil if the top is catching
- Leave to cool and enjoy a slice with a brew
This will last a couple of days in an air tight container if you can resist eating it all at once.
