Switching to a vegetarian/vegan or plant-based diet can seem daunting but supermarkets that are available to everyone have really stepped up the game.
I always write a list before I go to the supermarket otherwise I go crazy and want everything!
TIP – Don’t go to the shop hungry, you’ll want all the wrong things ๐ย
I make a list of what meals I want for the week and then the things I need if they are not already in my cupboards. I often have leftovers for lunches so I don’t need to make separate things. Making meals for one can be difficult without making way too much so it’s a win-win really, no waste and easy lunches.
This week I am making;
- Veggie Curry
- Veggie Bolognese and spaghetti
- Stuffed peppers with quinoa and beans
- Spicey fried rice
- Cheeky frozen Pizza
- Mac and Cheese
- Soup
What I got for this week;
- Carrots
- Courgettes
- Plum Tomatoes (for soup)
- Cherry Tomatoes
- Apples
- Onions
- Avocados
- White potatoes
- Sweet potatoes
- Mixed salad
- Pringles (essential)
- Moo free Easter Egg (easter treat from my boyfriend)
- Soya Milk (for tea)
- Oat Milk (for porridge)
- Brown Rice
- Passata
- Tinned Tomatoes
- Cinnamon
- Chickpeas
- Black beans
- Coconut Milk
- Violife Cheese (for mac and cheese – Recipe coming!)
- Peppers
I do try and get as many things that aren’t wrapped in plastic but supermarkets do make it hard. I have used markets and no package shops but this week I went for convenience and tried my best.ย
Every week is different and sometimes more than others. This week I clearly ran out of milk… haha!
So I will be posting some of this week’s recipes on here for you guys to have a little look at ๐
