I love a good Banana Bread, I don’t know about you but sitting down with a slice and a cup of tea… yummy!
After lots of experimenting with different recipes, I have found a really nice Gluten Free, Vegan and no refined sugar loaf. Now to some that might sound disgusting and bland but it is so scrummy you have to try it.
Ingredients
- 2 1/2 cups rolled oats (260g)
- 1 3/4 cups mashed banana (420g)
- 1tsp baking soda
- Cinnamon (to taste)
- 3/4 tsp baking powder
- 3/4 tsp salt
- 1 1/2 vanilla extract
- 1/3 cup milk (soya)
- 1/2 cup of honey or maple syrup
The method is super easy to do. Use a food processor and bung all the ingredients in. Simple. Then line a loaf tin with either butter or paper. Pop the mixture into the tin and pop in a preheated oven (180 degrees) for 45 mins until golden brown. Leave in the oven with it turned off for about 30 minutes.
Done. Easy. The best thing about this is that you are using up bananas that otherwise may go in the bin. Or buy them at a supermarket when they’re cheaper cause they’re going past best.
Now grab a cup of tea or any other beverage you might fancy and cut yourself a slice. Or have it for breakfast with some berries, your choice just enjoy!
